Description

Endive is a vegetable that looks very much like lettuce, except that it is curly. It is also known as escarole or chicory, and is very closely related to the dandelion plant. escarole is a good source of minerals like manganese, copper, iron, and potassium. Manganese is used as a cofactor for the antioxidant enzyme, superoxide dismutase. Potassium is an important intracellular electrolyte helps counter the hypertension effects of sodium.
