13. Coconut cardamom cookie
I cant believe its half the month gone by already. Boy. i can never get too much time. Its week 2 of our anniversary month in the cookies group. For the first week, we all made delish cakes. Do check our delicious cakes Jamaican Banana Layer cake from me, a classic vanilla sponge cake with chocolate frosting by Radhika, a beautiful creative dino cake that roshni baked for her son's birthday, tres leches cake that Jayanthi made with full of whipped cream goodness and an Oreo Cream Cake that s such a cool cake by Kavi. We decided to bake cookies for week 2 to justify our Avant Garde Cookie selves completely. Keeping in tune with that, i baked some coconut cardamom cookies. Something that i ve been wanting to make for so long and this anniversary was a perfect time for that.

With summer here we all like to relax a little more and spend less time in the kitchen. American Express asked me what dessert I could make with 6 or less ingredients. The first thing that came to mind were sweet And fruity popsicles. Both kids and adults love popsicles. They are a tasty little lick of summer frozen on a stick. Strawberries and peaches are amazing out of hand. They taste even better with a splash of coconut milk.

Whatev. Ive made these little guys before, but they were just cookies. When I just put the link in there I realized I called them peanut butter cookie dough bites last time. Thats cute.

However, one major difference this time is that instead of golden raisins, my safe and familiar friends, I went for it with the exotic dates. See them up there? I couldnt do a close up of those puppies. Theyre not pretty. But I got over their wrinkly smushy looks quickly when I realized that they work like a charm for making vegan, gluten free, grain free, and refined sugar free COOKIES.

18. Eggless molten lava cake
forgot to tell you how the cake turned out. I used some math and little bit of sciencenot much of mind boggling here. to convert this recipe to an egg less one for this months Baking Eggless groups challenge and I also made sure I didnt cook the cake for too long as I wanted to get the molten lava chocolate to ooze out from the center. Was I successful, you see the results and let me know To me it was perfect and Im out of here Im switching to my cozy world.see ya later.
19. Watermelon granita
Its so hot. I can hardly say anything beyond that. My back is dripping sweat, my brain is fried, and my garden is crying out for relief. When its this hot outside, granita is the perfect treat. And you know what? The name granita is unnecessarily sophisticated; its basically a glorified slushie. To make granita, you do nothing more than pour a fruity liquid into a pan, then place it in the freezer and use a spoon or fork to scrape the icy mixture as it freezes. It couldnt be simpler, and there are so many different varieties just make a liquid out of any fruit, pour it in a pan, and freeze it. Boom. Youve just made granita. Heres a watermelon version. The color is gorgeous, the melon version shines through, and it just sings summer.
20. Yogurt Cream and Berries
First, pour the yogurt into a bowl. Then add the cream. With a whisk carefully stir until combined. It should be nice and thick. Sprinkle the brown sugar evenly over the top of the yogurt mixture. Do not stir the mixture. Cover the bowl with foil or plastic wrap and tightly seal the edges. Place in the refrigerator for at least three or four hours. When you are ready to serve, place a small handful of berries or other fruit into a bowl or cup. Now, you can either not stir the mixture and have small visible bits of brown sugar in the finished product or you can whisk the mixture until smooth. This is how I like it. Stirred or not, spoon the yogurt mixture over the berries or fruit. Repeat the layers once, ending with berries on top.
