21. Mixed berry shortcake
Its Monday. Its a brand new week. The birds are chirping. The coffees brewing. Everything has such hope and promise. And heres why The utter horror the abject hopelessness of springing forward is finally behind us. Man, was this year a toughie. I didnt think I was going to make it there for a minute. The first part of last week, I felt like a combination of zombie, sloth, nitwit, dodo bird, and koala bear. I couldnt think, move, think, function, or remember the Macarena.

But slowly, as the week went on, things slowly improved. By the weekend, it became clear to me that I was going to live. And to celebrate, yesterday I made a round of berry shortcakes for the everyone. It felt so good to be back. Youll love this shortcake recipe. I used a sweet version of the drop biscuits I made in last weeks Biscuit and Sausage Gravy post, then I whipped up some syrupy berries and topped the whole thing with an unimaginably delectable sweet yogurt cream, which should come with a warning label, its so addictive.

The reason Im posting puppy chow recipes so often recently? Because we love the stuff. And I know you do too. Sitting on the couch on a lazy weekend night watching terrible reality TV with friends is the perfect excuse to make it. And thats how Ive been spending my weekend nights recently. Ive told you before, Im boring. Its much too cold outside. Puppy chow saves the day. Puppy chow is also called Muddy Buddies. I grew up calling it puppy chow but sometimes Im caught calling it muddy buddies. Both names are fun to say.
24. 3 ingredient chocolate bars
Im the kind of gal who prefers vanilla over chocolate. Its true. Im a sucker for funfetti and vanilla frosting over devils food any day.But today I bring you a chocolate bar that I could seriously eat everyday for the rest of my life. And I wouldnt even have to feel guilty about it because they are completely vegan, and have heart healthy shiny hair stress relieving fats from coconut oil. Read here for more health benefits of coconut oil. sidenote there is no underlying coconut taste in these bars. So even if you loathe coconut, no fret. You wont be able to taste it. These bars took me a 5 whopping minutes to make. Make sure to store these in the fridge because coconut oil is almost liquid at room temperature. Feel free to add more or less splenda agave honey. Adjust the sweetness to your tastes. Using honey or agave will produce a smoother chocolate bar though with honey theyd no longer be vegan. Splenda makes the bars lighter in color and a bit grainy. I didnt mind it though. Go by your taste preference.
25. Eggless chocolate pudding
There is nothing more comforting than a glass of velvety smooth Chocolate Pudding. Come on, whos with me? Youre not? Oh, I get it. You think my chocolate mousse is better. P Thats okay. I do too. BUT. every now and then, I like to get my pans dirty and make a glass of intense chocolate pudding. And while some may think puddings are not the in thing anymore, I never say no to the good ol classics. This Eggless Chocolate Pudding gets its intense chocolatey flavor from using good quality dark chocolate as well as unsweetened cocoa powder. The smooth texture is as a result of using cornstarch for thickening the cream and the agar agar is for setting the pudding. You can easily make this with low fat milk but HELLO. Do not go easy on the heavy cream.
26. Tres leches fudge bites
Im hoping you all have heard of a Tres Leches Cake. For those of you who dont know it is a Mexican cake soaked in 3 kinds of milk. It is rich, dense and delicious. Consider this You have a Christmas Party Get together. You decide you are going to take the trouble of making this cake for your guests. However, you then realize it is already Christmas day or the party day and you have so much of cooking preparing to do that there is no time for making a tres leches cake.. What would you do? Would you run out the store to get some ice cream? Naa.. that doesnt seem like you made the effort. You should instead quickly whip up a Tres Leches Fudge. So easy, fudgy and delicious. Like the name suggests, it is made up of 3 kinds of dairy products condensed milk, cream cheese And milk powder.
27. Funfetti cupcakes
I dont know why, but Im suddenly obsessed with making mini versions of everything. I find that mini cupcakes or mini cakes or mini scones are just the way to maintain portion control whilst ensuring that more people get to have a taste of the treat. Wouldnt you agree with me? Take these Funfetti Cupcakes for example. If I were to make the same as regular sized cupcakes, Id probably get about 4 6 of them. And I think they would lose their cuteness. But this way, not only do I get about 25 cute mini cupcakes, I also fed them to an army of neighborhood kids.

I may have probably made a billion recipes with Nutella so far and Im not done yet. Ill keep coming up with recipes and you keep enjoying them. Because it is impossible for a recipe with Nutella no matter how flawed it is to go wrong. These cupcakes are a perfect example. I had some leftover Nutella Milkshake. Instead of drinking it as is, I decided to throw in a bunch of ingredients to make these super cute mini Nutella Cupcakes.
